Pastinaca (parsnips) is a genus of flowering plant in the Apiaceae, comprising 14 species. The economically most important member of the genus is Pastinaca sativa, the parsnip.
‘Pastinaca’ means ‘Earth-food’, or ‘from a trench in the earth’, and is derived from the word ‘pastinare’, meaning ‘to dig’.
