Ratna Cafe or Triplicane Ratna Cafe was founded and established in 1948 by the Gupta family and particularly by Mr. Jaggilal Gupta, originally hailing from Mathura, UP. The chain was started by a man from Mathura who ended up giving the city its most popular dish; idli-sambhar.

Rajendra Gupta, who is the current promoter of the group acquired it from his uncle Mr. TrilikNath Gupta in 2002, and continued developing the business by expanding outside its flagship store in Triplicane. Saravana Bhavan

imageHotel Saravana Bhavan

Hotel Saravana Bhavan is one of the largest vegetarian restaurant chains in the world, founded in 1981 offering south Indian Vegetarian cuisine. They have more than 33 outlets in India (20 outlets in Chennai alone) and 47 around the world (including Australia, Canada, United Kingdom, France, Germany, Singapore, Malaysia, Thailand, the United States, and the Middle East. As of 2012 there are plans to open 5-star Vegetarian-Hotels.

The restaurant is called "hotel" because in India, the word "hotel" often implies a restaurant.

In the early 20th century, there were practically no restaurants in Madras (now Chennai). P. Rajagopal in 1968 opened the a tiny grocery shop on the outskirts of the city. When he opened his first restaurant in K.K. Nagar in 1981, his shops were deeply in debt; however, an astrologer suggested that he try a line of work that involved fire. Contrary to common practice, Rajagopal started using top-quality vegetables and gave his workers high wages. Initially his business was losing 10,000 rupees a month. Eventually, however, his food came to be known as was high quality and inexpensive, and soon his business was profitable and he started opening new branches.

Rajagopal belongs to the Nadar business/landowning community. In 1992, Rajagopal on his visits to Singapore observed the functioning of the multinational fast food joints like McDonald's and used them as a model.

He provided his workers unprecedented benefits, health care, housing allowance and a marriage fund for their children. By the 1990s, the Saravana Bhavan chain spread throughout neighborhoods in Chennai. In 2000, Saravana Bhavan opened its first branch outside India, opening a franchise in Dubai, with a large number Indian expatriates. It eventually expanded to Paris, Frankfurt, London, New York, Toronto and Doha, Qatar, relying on the expatriate Indian population. It does not attempt to attract non-Indian customers. They are sometimes referred to as "canteen-like joints are strictly aimed at Indian expatriates missing a taste of home" It is considered to be a high volume, low margin venture which is labor-intensive. Saravana Bhavan sends workers from India to work in their foreign branches. The overseas outlets are run by franchisees.

It is expected that the customers know what they want, with the waiters essentially taking orders and delivering the food. The food is prepared fresh and the high volume reduces the waiting time.

Vadilal

imageDevansh Sanghvi

Vadilal Industries Ltd is India’s second largest ice cream player. The company is also one of the largest processed food players in India with significant exports of frozen vegetables and ready to eat snacks, curries and breads.

Vadilal Industries has come a long way since its inception in 1926, when Vadilal Gandhi started a soda fountain in 1926. He passed on the business to his son, Ranchod Lal, who ran a one-man operation. Eventually, Ranchod Lal's sons, Ramchandra and Lakshman, inherited the business and they were instrumental in giving a new direction to the company. The duo imparted a new vision to the venture and infused a spirit of calculated risk-taking into the firm. As a result, by the 1970s, the Vadilal Company had already evolved into a modern corporate entity.

Vadilal Industries has extensive reach. A major success factor has been its ability to cater to different market segments through multiple product ranges. Vadilal has range of ice creams in the country with 150 plus flavours and they are sold in a variety of more than 250 packs and forms. The range includes cones, candies, bars, ice-lollies, small cups, big cups, family packs, and economy packs. It offers something for all tastes, preferences and pockets.

Vadilal Industries has two ice cream production facilities – one at Pundhra in Gandhinagar district, Gujarat and the other one at Bareilly in Uttar Pradesh. It has a very strong distribution network of 50,000 retailers, 250 SKUs (stock keeping units), 550 distributors, 32 CNF and 250 vehicles for delivery of goods. Through the franchisee route, Vadilal has set up over 140 'Happinezz' parlors for selling ice creams and new ones are coming up every month.

Vadilal entered the processed foods industry to optimise utilisation of its extensive cold chain network in the 1990s. It currently caters to the domestic and export markets with products such as frozen vegetables and ready to eat snacks, curries and breads. This business is poised for strong growth in the coming years owing to greater urbanisation within India and increasing demand for Indian food amongst developed regions like the USA and western Europe.

The company’s national ice cream market share would have been even higher but for the fact that it does not operate in major consuming regions like Maharashtra and the four southern states as these are covered by another faction of the Vadilal family.
