Steam Whistle Brewing

imageSteam Whistle Brewing

Steam Whistle Brewing is a brewery in Toronto. The company produces a premium pilsner lager packaged in distinctive green glass bottles and a non-twist cap. They only use four natural ingredients: spring water from Caledon, Ontario; hops from Czech Republic and Germany; two-row barley; and yeast. In 2004, Steam Whistle Pilsner was voted best beer in Toronto at the Golden Tap Awards. Steam Whistle has also been voted Best Toronto Microbrewery by the readers of NOW, Eye Weekly and XPress in Ottawa.

The three founders are former employees of Upper Canada Brewing Company before it was bought by Sleeman's. The original name for the beer was going to be "Three Fired Guys Brewing Company" since they were all fired from Upper Canada Brewing Company when it was purchased by Sleeman; however, they chose Steam Whistle Brewing to evoke an image of steam rushing from a factory's whistle signaling the end of the work day. Embossed at the bottom of Steam Whistle bottles is "3FG" as an inside joke, referencing "Three Fired Guys".

The first batch of bottled Steam Whistle pilsner rolled off the line onto market on May 24, 2000

Steam Whistle beer is sold in Ontario at The Beer Store and the LCBO as well as at bars and restaurants. Steam Whistle is also available throughout Alberta and British Columbia at retailers, bars, and restaurants. Steam Whistle is currently in the process of packaging their beer in cans as a means of further penetrating the western Canadian market.

In April 29, 2015, Steam Whistle introduced 6 packs into the Nova Scotia market.

The brewery occupies Bays 1-14 within a building known as the John Street Roundhouse at Roundhouse Park. Built in 1929, it was previously the home of a Canadian Pacific Railway steam locomotive repair facility, and operated as such until May 13, 1988. The John Street Roundhouse is designated a National Historic Site, and is owned by the City of Toronto. It is located within walking distance of the Rogers Centre and the CN Tower. A similar roundhouse, the CNR Spadina Roundhouse, was torn down to make way for the SkyDome (now Rogers Centre).

Unibroue

imageUnibroue

Unibroue is a brewery located in Chambly, Quebec, Canada that was started by Serge Racine and Quebec native André Dion. The company was purchased by Sleeman Breweries Ltd. in 2004, which was itself taken over by Sapporo in 2006. The company was incorporated in 1993 and is the first of three microbrewing companies in Greater Montreal area (followed by "Brasseurs RJ" and "McAuslan"), both chronologically and in terms of sale benefits.

Unibroue was founded by business partners André Dion and Serge Racine who had acquired 75% of La Brasserie Massawippi Inc. of Lennoxville in 1990. The two purchased the remainder of the shares at the end of 1991 when they transferred their interest in La Brasserie Massawippi Inc. to Unibroue.

By 1992, La Brasserie Massawippi Inc. became a wholly owned subsidiary of Unibroue. Afterward, it changed its corporate name to Brasserie Broubec Inc. and in July 1993 merged with Unibroue. It was bought by Canadian brewer, Sleeman Breweries Ltd., in 2004. Sleeman, in turn, was purchased in 2006 by Sapporo.

Unibroue makes a wide range of beers, although there is a focus on Belgian-style brews, such as their Maudite ("Damned"), La Fin du Monde ("The End of the World"), and Don de Dieu ("Gift from God"). Most of Unibroue's beers are bottled "on the lees", or containing yeast sediment (or lees). This practice provides additional fermentation, also called bottle-conditioned, after bottling. The result is a beer which ages well if kept in the dark and unrefrigerated, and allows it to be shipped relatively cheaply to international markets. The yeast gives Unibroue beers a cloudy appearance and provides a characteristic element to the taste. On many of their labels, suggested serving temperatures (for example, "better at 12°–14°C") are included.

La Fin du Monde (literally French for "The End of the World" as per the translation on the back of each bottle) is a Belgian-style tripel and bottle conditioned golden ale introduced in July 1994. The name is claimed to derive from the European explorers' belief that they had reached the end of the world when they discovered America.

Upper Canada Brewing Company

imageUpper Canada Brewing Company

Upper Canada Brewing Company is a division of Sleeman Breweries in Guelph, Ontario, Canada. Founded by Frank Heaps in Toronto, it started brewing beer in 1985 and grew to become one of the largest independent breweries in Canada.

While an independent, the brewery's location was at 2 Atlantic Ave. in Toronto and included a "gift shop" that allowed the independent brewer to sell alcohol on Sunday, something that Ontario's licensed outlet Beer Store chain, which had a virtual monopoly on beer sales, was not permitted to do at the time.

The company was sold to private investors in 1995, went public in 1996, and was finally acquired by Sleeman Breweries in 1998.

Sleeman purchased the company for $28 million and reduced the number of Upper Canada products since they were competing with the Sleeman line. The new owners also closed the Toronto brewery and moved the operations to its Guelph, Ontario facility. Two brands are manufactured: Upper Canada Lager, a German-style lager and Upper Canada Dark Ale, "with a robust malty character and a rich chestnut colour".

After the sale to Sleeman, Heaps provided some funding to his son Cameron and his partners Greg Taylor and Greg Cromwell, all formerly employees of Upper Canada, who opened another Toronto-based brewery in 2000, Steam Whistle Brewing.

Wellington Brewery

Wellington Brewery is a brewery in Guelph, Ontario. It was established in 1985 and was one of the first North American breweries to revive the ancient technique of brewing cask-conditioned cask ale. Phil Gosling was the founder. By 2011, the volume of sales required to company to expand its brewing capacity. Two new 150HL tanks were installed. In January 2013, four more tanks were installed to keep up with demand for Wellington products. In 2015, the company's facility was expanded with a 12,000-square-foot addition, including a 40-hectolitre brew house and new packaging line. At that time, the company employed a staff of 45. The company also has a distribution warehouse in Toronto.

In 2000, new owners acquired the company: Mike Stirrup and Doug Dawkins. Unlike many small breweries making Beer in Canada, Wellington has not been acquired by a major brewer; hence, the company now bills itself as Canada’s oldest independently-owned craft brewery. Traditionally, this craft beer was sold in bottles, but recently, the company has increased the use of cans to meet the growing public demand for this type of beer container.

The Wellington beers are brewed in small batches with natural ingredients and uses no cold filtration, natural carbonation, no pasteurization, and secondary fermentation in casks. The brewery's architecture is an homage to the traditional Oast house, the farm building used for drying hops in preparation for the brewing process

Over the years the company has won numerous awards for its products, at events such as the Canadian Brewing Awards, the Ontario Brewing Awards and the U.S. Open Beer Championship. In the 2016 Ontario Brewing Awards, for example, Wellington's Imperial Russian Stout earned a gold medal, County Dark Ale received a gold medal, Iron Duke won a bronze, and Arkell Best Bitter earned a silver. In the small-batch category (brwed in collaboration with another company), Wellington gained awards for the Welly One-Off Series, A Spice Odyssey and Farmers' Market Rhubarb Saison.

Some of the following are seasonal, or brewed only occasionally.

Wild Rose Brewery

imageWild Rose Brewery

Wild Rose Brewery is a small craft brewery in Calgary, Alberta, Canada. Established in 1996, the brewery is noted for using all-natural, local, unpasteurized ingredients with no preservatives. Wild Rose Brewery is 100% Alberta owned and operated, and Wild Rose Craft Beer is only available in Alberta.

Wild Rose Brewery was founded in 1996 by Mike Tymchuk and Alan Yule. The brewery was initially located in Foothills Industrial Park, and only produced draught beer for sale in bars. In 2002 the brewery began bottling beer in 1 L flip-top bottles.

In 2006 the brewery moved to Building AF23 at Currie Barracks. The building, a Quonset hut originally built as a clothing supply store, was renovated to include not only the brewery but also the Taproom—an on-site pub. Upon having moved to the new location the brewery also expanded their business into bottling their products in 341 mL bottles.

The brewery's increased popularity and doubts whether their lease at Currie Barracks would be renewed prompted the company to relocate the bulk of their production to a new location in Foothills Industrial Park (less than 1 km from Big Rock Brewery) in 2013. Their most popular beers are produced at the new facility, while certain seasonal and limited edition beers are still produced in small batches at the Currie Barracks facility, and rotating "Tap Room Cask" and "Brewers Tap" beers are available on tap only at the Taproom.

In the spring of 2015 Wild Rose began packaging their beers in cans for the first time.

Wild Rose brews a set of 'core' beers, which are widely distributed on-tap in bars and available in six- and twelve-packs in liquor stores throughout Alberta:

Other Wild Rose beers are only available on-tap:

A wide variety of seasonal and limited edition beers are also produced. Some of these include:

Wild Rose's Cherry Porter has been recognized as a top beer by several books including 1001 Beers You Must Taste Before You Die and World's Best Beers: One Thousand Craft Brews from Cask to Glass
